Lori has two highly insulated rooms in her barn for growing and harvesting her microgreens. Heating and cooling are provided by an efficient heat pump and power is primarily from a nearby solar array.

About Our Microgreens
A microgreen is a young plant that grows for approximately one to three weeks. Grown to one to three inches tall, they are then harvested for maximum flavor, tenderness, and nutrition. As each variety is different, they vary in texture, color, and taste. Microgreens are not to be confused with sprouts, which are simply seeds germinated in water.
The University of Maryland tested microgreens for several vitamins and found, by weight, they contained 4-40 times more nutrients than the mature vegetable. Packed with goodness and easy to add to your meals. Just grab a handful and add to salads, sandwiches, pasta, smoothies and stir-fries for an easy and potent shot of vitamins and flavor! A convenient and flexible way to have more fresh and healthy food daily.
Lori has two highly insulated rooms in her barn for growing and harvesting her microgreens. Heating and cooling are provided by an efficient heat pump and power is primarily from a nearby solar array. Vermont’s High Mowing organic seeds are spread in 10” x 20” flats and the microgreens are carefully tended and watered. They first germinate in the dark for a few days, then they go under lights to continue growing and greening up. Lori’s microgreens grow in coco coir (ground up coconut husks) and Vermont Compost’s potting mix. Coco coir is potting mix-like in consistency and provides for excellent moisture control.
As the microgreens grow, the cotyledons are the first leaves to show themselves, and then the true leaf. At that point they are harvested. Growing from germination to harvest takes just over a week for radishes and peas, and up to three times as long for other varieties. Lori’s planting schedule assures a bountiful weekly harvest of microgreens at peak of nutrition and taste!
Lori mixes her microgreen crops to create a wondrous blend of pea and sunflower shoots, radishes, broccoli, kale, kohlrabi, arugula, red cabbage, basil, amaranth, beets and mustard.
About Lori
Lori Baker believes in living and eating in a way that is healthy and energizing, sparks her interests, and helps her stay focused. There is so much that goes on in a day, but growing and sharing microgreens motivates Lori and energizes her to keep living a full life!
Having run multiple businesses in the past (for example, a freelance illustrator with national clients for 17 years; Kidlets – up-cycled hats and booties for kids across the country; executive director of a community justice center) and having earned her master’s in mediation, she has the skills and experience needed for starting and running enterprises. Having lived on Wellspring Farm in Marshfield since 1989, Lori has seen and been a part of the organic movement in various ways. Her husband (and microgreens growing/harvesting/delivery [by bike]) assistant!), Les Snow, grows organic vegetables, has had an organic sauerkraut business, and in 1989, started one of the first Community Supported Agriculture (CSA) projects in the country, and together they advanced the concept in the community. Now, CSAs are a huge part of the farm fresh movement. Today, Les and Lori have an extensive garden and flower beds, providing healthy food throughout the year as well as wonderful bouquets for their table.
Addressing a health issue for many years, Lori’s focus has been personal rather than professional. Now, having the time and energy to experiment and grow, she has discovered that growing and sharing microgreens is a perfect match. She continues to test many varieties of crops to find yet more amazing mixes to share with subscribers.
Lori appreciates being able to keep Wellspring Greens ultra-local with a minimal carbon footprint. Together, we are growing a healthier community!

Wellspring Greens to You!
Lori harvests the microgreens and delivers them to your home on Wednesdays. You receive an incredibly nutritious food at optimum freshness! To maintain this same day harvest-to-door service, Lori is limiting her deliveries to Marshfield and Plainfield. View the delivery route below to see if your home or workplace is on the route or within a couple of minutes of it. Pick up at the farm is also available.
The microgreens are delivered in reusable Tupperware-like containers. For subscribers not at home, the containers are left in insulated boxes (including an ice pack in the summer). When delivering microgreens the following week, Lori retrieves the used containers and ice packs. No waste packaging involved!
Choose to receive 3 ounces (the “Appetizer,” $7.50), 6 ounces (the “Bulky,” $15.00), or 12 ounces (the “Double Bulky $30.00) each week. To help you decide which would be a good choice for your regular delivery, ask Lori to deliver a free 2 ounce “Sampler” when filling out the contact form.
After trying out the microgreens, submit the Subscribe form to sign up. Lori will then contact you to let you know when you can expect your first delivery.
Payment for your microgreens occurs via your credit card or your PayPal account when you subscribe, and automatically every week thereafter. Let Lori know before the Wednesday delivery if you want to end the subscription or if you want to pause it while you are away from home for an extended period.
In addition to delivering to your door each week, Lori also delivers to the Onion River Food Shelf in Marshfield. Let her know by Tuesday if you prefer to have your microgreens included in the food shelf’s portion that week.
We harvest and deliver direct to you each week!
For customers in our delivery area (Plainfield and Marshfield. See our delivery route below.), we offer subscription-based, weekly deliveries on our harvest day…Wednesday. When subscribing, you choose the amount you would like to receive each week.
With each delivery, you will receive a glorious mix of fresh microgreens, including pea and sunflower shoots, radishes, broccoli, kale, kohlrabi, arugula, red cabbage, basil, beet, amaranth and mustard.
